Bento #75 - Rice cooker Chicken Rice

I love cooking rice cooker chicken rice because it is so convenient! Here's my humble recipe to share with you all.

Servings 2 persons
Ingredients
  • 1 cup of rice
  • 2 big drumsticks (as show in pictures)
  • 6-7 teaspoons of WOH HUP Chicken rice paste (taste and adjust to your preference) - there are many other brands to choose from of course
  • 5 - 6 cloves of garlic (remove skin) - (No harm adding more!)
  • 5 - 6 slices of ginger (No harm adding more too!)
  • Pandan leaves and a few drops of sesame oil to make the rice more fragrant
Method
  • Wash the rice, drain the water and put it into the rice cooker
  • Add in around 3/4 cup of water - (Use ratio 1:1 when cooking normal rice but because there will be chicken juices produced during the cooking process, we will need to reduce the water else the rice will be too soggy)
  • Add in the WOH HUP Chicken rice paste and stir till it is dissolved in the water. Taste and adjust to your preference. (add more if you prefer it to be saltier)
  • Add in the garlics, ginger slices, pandan leaves and a few drops of sesame oil
  • Place the 2 big, fat drumsticks on top of the rice, close the lid and press the magic button 'Cook'

After around 50 min, ta-da, it's done! I'll normally leave the chicken in the rice cooker for a while more, perhaps 10 more min to ensure they are cooked thoroughly. While cooking, the juices from the chicken also seeped into to rice, making it more flavorful.


This is my hubby's lunch with half a lava egg and some appetizing cold cucumbers (marinated with vinegar and sugar ) as the sides.


Rayson has quite a good appetite recently so he gets to bring one big drumstick to his school as well. He is very satisfied with the large serving...Hee.......

  1. Hi, I'm impressed by all your bento meals! I'm also starting to learn to prepare bento meals for my girl's recess. She'll be in P1 next year.

    May I ask, how long can the food be kept in the bento lunchbox without turning stale? The food will be kept at room temperature right?

    1. Hi!Thanks so much for being so encouraging.My bentos are done at 5+am and they last till noon..so no worries,they can last for quite some time.But remember to cool down the food
      completely before packing into the lunchboxes to avoid any growth of bad bacteria.Bacteria loves warm and moist environment.You can also use ice packs to keep food fresh till lunch time.

    1. Thanks!It's Lunchbot lunch boxes bought from US,made of foodgrade stainless steel.
      You can try Amazon but I'm not sure of the shipping charge.
      There's a local distributor but with limited choice.
