#Bento 106 - Breakfast set - Grilled cheese sandwiches with curry potato and egg salad

For a change, I prepared breakfast bentos for them today.

Recipe for curry egg and potato salad

2 eggs
1 potato
Japanese Mayonnaise
2- 3 tablespoons of Meiji Milk
Some black pepper (According to preference)
Curry powder (According to preference)


1) Cook the potato till it is soft (*Important: Potato must be cooled down completely before adding the mayonnaise or it will turn very oily)

2) Prepare the 2 hard-boiled eggs.

3) Mash the potato and eggs and add in Meiji Milk. Mix until they are soft and mashy or you can leave some small chunks if you prefer it that way.

4) Add in mayonnaise (amount to add according to preference) and mix well.

5) Add in some black pepper.

6) Last but not least, add in the secret ingredient: Curry powder! (Curry powder really enhances the taste of the salad and makes it very special!)

You can always prepare overnight and keep it in the fridge. Serves chilled. Enjoy!
